Ingredients:

1 pound ground beef or turkey
1 onion, finely chopped
1 bell pepper, diced
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 cup salsa
1 packet taco seasoning
2 cups cooked rice
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Tortillas (flour or corn), cut into bite-sized pieces
Optional toppings: sour cream, guacamole, diced tomatoes, chopped green onions, cilantro
Instructions:

Preheat your oven to 350°F (175°C).

In a large skillet, cook the ground beef or turkey over medium heat until browned. Add the chopped onion and bell pepper, cooking until the vegetables are softened.

Stir in the black beans, corn, salsa, and taco seasoning. Let the mixture simmer for a few minutes to allow the flavors to blend.

In a large mixing bowl, combine the cooked rice with the meat and vegetable mixture.

In a greased casserole dish, layer half of the rice and meat mixture. Top with a layer of tortilla pieces and half of the shredded cheese.

Repeat the layers, finishing with a layer of cheese on top.

Cover the casserole dish with aluminum foil and bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.

Remove the foil and bake for an additional 5-10 minutes or until the top is golden brown.

Allow the casserole to cool for a few minutes before serving. Top with your favorite toppings like sour cream, guacamole, diced tomatoes, green onions, or cilantro.
